India 11 August 2016: Chocolates are available in 3 types Dark, Milk and White.
Each has a different taste, flavour and texture. Dark contains maximum coco content. Milk has coco and milk solids and white is purely milk solids with coco butter. These compound slabs are easily available in your nearby super market.
To make chocolates or chocolate rakhis you need to 1st chop this chocolate slab into small pieces to help it to melt faster.
You can melt it in microwave or use a double boiler to melt the chocolates. Microwave method de-hydrates the chocolate and its shine is lost, so I prefer the double boiler method where the shine is retained due to controlled heating.
Tempering the chocolate is very important process as it adds to the gloss of the chocolate. Using a drop or two of grape seed oil helps to achieve this instantly.
The melted chocolates can be coloured or flavoured using oil based food essences and food colours to give them zingy colours and make the rakhi colourful. Do not use water based colours or essences it will spoil your chocolate instantly so will a drop of water accidently falling in the chocolate while melting.
Add the melted chocolates in the moulds of your choice and make tiny colourful designs. Using a ribbon with a plastic base paste the decorated chocolate Rakhi on the plastic using a drop of melted chocolate and your rakhi is ready to eat. ….I mean Tie.
