How to select almonds?
Almonds or Badam are available in various forms like shelled, unshelled, salted etc. For shelled almonds shake them and see, if you find a rattling sound that means they are not fresh and are shrinking. While buying unshelled almonds check to see if they are bright brown in color, are uniform in size and feel heavy. It should also not have any cracks or spots and should not smell rancid.
How to store almonds?
Unshelled almonds should be stored in an airtight container in a cool dark place where they can last easily for up to a year. You can even store it in the refrigerator. The average shelf life of Almonds Is 1 year. Storing almonds or badam in the freezer in an airtight container extends it life by another year. Almond paste stored in an airtight container has a shelf life of upto 2 months. Almonds or Badam should be kept away from humidity to get maximum shelf life.
