Mostly Grills, the rooftop barbecue restaurant at The Orchid invites you to be the part of the biggest kebab trail where Chef Shadaaab from Lucknow explores the delicacies from the lands of erstwhile nawabs- Awadh (Lucknow), Nizams and other kingdoms and showcases the best of Kebabs, biryanis, niharis, salans and special Indian breads.  The highlight of the fest would be a live trolley where the chef will be making kebabs and other barbecue items live in front of the guests. Moreover the guest can ask to get any of the kebas flambéed in the choice of their liquor on their tables.

Interestingly, the festival is not just about non vegetarians. Chef Shadaab who hails from Alamganj, Lucknow recommends trying amazing vegetarian delicacies which the Royals feasted.  The chef has procured the spices and other condiments from various places to ensure real and authentic taste.

 Says the GM, Varun Sahani, “We are presenting the best possible array of kebabs and other meat preparations to our guests, a lot of research and thought has gone into conceiving the menu. “.  The restaurant will be decorated with artifacts and other stuff.

For example Siyamirch murgh which is Chicken morsels steeped in a marinade of “siyamirch” yogurt, ginger and coriander, grilled in a tandoor is served flambéed with dark rum. It gives a distinct taste to it. Similarly Tatari champ which is Kid lamb chops marinated overnight with Andhra chili, cumin, cloves and pure ghee cooked in tandoor, Andhra chilli gives it a unique taste and it blends very well with the pure ghee.

In the vegetarian section Meve mave ki khaas sheikh (Cottage cheese royally treated with condensed milk , saffron and nuts and char grilled live will be treat for vegetarians as would be Bharwan Dhingri kebab ( Button mushroom stuffed with cheese, cooked in tandoor). Another dish worth mentioning is Tandoor Bharwan Lahori Aloo which is scooped potatoes stuffed with spices, raisins and almonds.

The non vegetarians can also feast on Maheen Samak tikka (Bekti fish marinated with ginger garlic and aromatic herbs slow cooked live), Galawati Kebab, Kakori kebab (delicate  kebab of finely minced lamb flavored with cloves & cinnamon, wrapped around a skewer and char grilled), Mughlai Shikampur (Lamb and lentils cooked with cinnamon, cardamom, cloves and pepper, minced and shaped into patties, shallow fried), Murg Naushaijaan (Creamy kebab of drum stick blende with cashewnuts, almonds, cream, cheese, lemon juice and green coriander, grilled in a hot tandoor),  Murg warq tikka (Boneless chicken  marinated  with onion, green chillies, garlic, fresh coriander, red chilly flakes and hung curd & grilled in tandoor) etc.

Some of the non vegetarian main course dishes are Shahi Nihari (Lamb shanks simmered on low heat cooked overnight served with Khamera naan), Degi Gosht (Baby lamb cooked with coconut, cumin and tamarind flavor gravy), Achari jhinga (Tiger prawns stir fried in Hyderabadi pickled spice, finished with tamarind pulp), Pudina machli ka salan (Pomfret cooked with onion, tomato, and mint gravy),

A variety of biryanis and a bread basket which consists of Sheermal, Baqarkhani, Khamiri roti , laccha paratha, lasooni naan are part of the menu as well.

The royal desserts which will be a part of the menu are Sheer kurma, Sewiyan ka Muzaffar (Vermicelli cooked win condensed milk topped with nuts), Khubani ka meetha, Shahi Tukda, Shahi Falooda etc. A live kulfi counter and paan counter will be other attractions.
